Celebrate the Bank Holiday weekend, and spoil yourself with my leisurely Banana Brunch Bruschetta recipe.

What makes your ideal Bank Holiday? I don’t want to make you too jealous, but I’ll be spending the Bank Holiday weekend on this beach in Portugal. That’s not an average Bank Holiday weekend for my family though. Usually we stay close to home, so that we can avoid the traffic and roadworks that always seem to snarl up the motorways on a Bank Holiday. So I’m more likely to be found at home with the boys, some good food and a glass or two of wine. We might have a family film night with pizza and popcorn, or spend an evening playing board games. And if the weather is really good we might even risk a barbecue! But one of my favourite things about a long weekend is taking time for a special breakfast. Brunch is even better, if I get the chance of a lie in. I tend to have overnight oats, scrambled eggs or an omelette for breakfast most days. But it’s nice to treat myself to something out of the ordinary now and then. So if you are in the mood for an indulgent morning treat this Bank Holiday, why not try my easy but luxurious brunch recipe for two.

Banana Brunch Bruschetta (Serves 1)

2 slices of brioche or fruit bread 2 tsp of strawberry fruit spread or jam 4-5 tbsp of ricotta Half of a banana, peeled Handful of berries 2 tsp of demerara sugar Preheat your grill to high and then toast two slices of brioche or fruit bread on both sides. Spread each slice with a couple of teaspoons of strawberry fruit spread or jam (I like Dalfour) and then smother it in ricotta. Make sure you get the ricotta right up to the edges of the bread if you can. And for an extra-indulgent treat, try using mascarpone instead of ricotta. Top with sliced bananas, and scatter over some of your favourite berries. Then sprinkle a teaspoon of demerara sugar over each slice. Pop it back under the grill till the sugar has melted – watch it carefully because it’s easy to overcook! Dust with icing sugar before serving and eat it while it’s hot.

Enjoy your brunch, and if the weather is good enough, it would be lovely to eat this outdoors in the sunshine.
